Ensenada: Tequila Barrel Aged Danish Wild Ale with Red Grapefruit, Sea Salt, and Sabro Hops
This beer was designed and executed by Baghaven Blender @ern.arse as part of a program allowing Baghaven employees to imagine and brew a beer which are entirely up them.
Ernesto chose to produce a beer that was reminiscent of his hometown of Ensenada, Baja California, Mexico.
A simple Mexican lager based was brewed with Danish Pilsner malt, Danish corn, and sea salt. The beer was fermented cold with a lager yeast strain and then racked to freshly emptied tequila barrels. After resting for one year in the barrels, fresh ruby red grapefruit and Sabro hops were added. After a brief aging period, the beer was packaged in green 75 cL bottles.
