The salty sea air doesn’t favour apple trees and so all of the apples that go into our Irish craft cider are bought from Irish farmers in the counties of Carlow, Kilkenny, Waterford, Tipperary & Cork. We know these farmers personally and this ensures we understand the care with which these crops are nurtured and grown – a fact which is hugely important given it is our sole principal ingredient and we’re committed to producing a natural cider with integrity.
When the apples arrive our small team of traditional Irish cider makers wash and manually sort them, removing any which we consider over-ripe or damaged. This helps us in our goal to achieve a pristine pressed juice. We add a final ingredient, a naturally cultured champagne yeast which gives our Irish craft cider such a distinguished “nose” and smoothness on the pallet.
